Chilled Rice Salad Ingredients: 3 c. instant rice 2 small cans of black olives, sliced 1 pint grape grape tomatoes 1 lb. mozzarella cheese, cubed 1/4 c. minced cilantro 1/4 c. minced parsley 1/2 c. olive oil 1/2 c. red wine vinegar splash of lemon juice salt and pepper to taste 1 small red onion, chopped (optional) Directions: Cook rice as directed.
