Chicken and Dumplings is a Hurst family favorite comfort food. It warms you up on a frigid winter day or when you are fighting off a cold virus. Best of all, it is easy to make and economical.
Cook and chop chicken
In a large pot add olive oil turn heat to medium. Add onions, celery and carrots. Sauté until veggies are softened and onions are a golden color. Season with salt and pepper.
Add chopped chicken and chicken broth. Bring to a boil.
Mix together flour, baking powder and salt in a bowl. Combine milk and oil, add to dry ingredients, mix until moistened. Drop table spoon size dumplings into bubbling chicken mixture.
Cover with lid. Lower heat to simmer for 15 minutes.
